3 cups fresh organic baby spinach, washed well and dried
1/2 cup finely sliced organic red onion
1 quart organic strawberries
Dressing
1/3 cup apple cider vinegar
2/3 cup extra-virgin olive oil
2 tbsp. honeyor agavenectar
1 tsp. paprika
2 tbsp. poppy seeds
2 tbsp. brown sesame seeds
2 tbsp. onion flakes
Combine the baby spinach, red onion, and strawberries in a large bowl and toss.
Want to amp it up? Add your choice of raw walnuts, diced medjool dates, crumbled feta cheese, sliced organic bacon, or raw pumpkin seeds.
Dressing
Whisk together dressing ingredients. Make at least 2 hours before and add to spinach, onion and strawberries just before serving.
