Ingredients
1 package gluten-free pasta spirals
1/2 cup organic red pepper, diced
1/2 cup organic cucumber, diced
1/2 cup organic red onion, diced
1 small can diced tomatoes, drained
1 small can black soybeans, drained
2 tbsp. toasted pine nuts
1/2 cup crumbled Greek feta cheese
Dressing
3/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tbsp. honey
1 clove organic garlic, crushed
1 tbsp. freshly squeezed organic lemon
1/2 cup tightly-packed fresh organic basil
1 tsp Herbamare
Instructions Place dressing ingredients in blender or food processor bowl. Process or blend until smooth. Cook the pasta in a large pot of boiling water until tender but firm, about 9 minutes. Drain. Place pasta and all salad ingredients in salad bowl. Pour dressing over pasta. Stir well to blend. Keep refrigerated
