These snacks not only look great but they taste even better! Allowing yourself to make these fruit and nut shapes gives you the ability to add more healthy boosts that the store-bought versions may be lacking. Using coconut sugar as a sweetener helps you avoid spikes in your blood sugar, yet still gives these snacks the perfect amount of sweetness. Calcium-rich almonds are the perfect nut for these bars to ensure you’re getting enough of this bone-building mineral. Mix these ingredients together and form your favourite shapes for a filling and fun snack!
1½ cups chopped almonds
1½ cups chopped and pitted dates
1 cup dried cranberries
1 cup dried blueberries
¼ tsp baking powder
¼ tsp baking soda
½ cup spelt flour
¹/³ cup coconut sugar
2 free range eggs
½ tsp vanilla extract
Combine nuts, dates, fruit, baking powder, baking soda, coconut sugar and flour. Stir well to make sure the fruit is completely coated. Beat eggs with vanilla extract until very pale yellow and very thick (about 3 minutes). Pour over fruit mixture and stir with a spatula to completely cover the fruit mixture. Pour this mixture into a parchment lined 9x9” pan. Bake at 325°F for 30 minutes. Let cool completely. Roll back parchment and cut shapes of your choice!
