4 medium sized organic beets, peeled and chopped into bite-sized pieces
1 Tbsp coconut butter
1 Tbsp rosemary
sprinkle of Herbamare
Greens
4 cups or so of mixed organic salad greens
1/3 cup crumbled blue cheese (use good quality!)
1/3 cup toasted whole walnuts
Dressing:
1/4 cup balsamic vinegar
1/3 cup olive oil
1/2 tsp Herbamare
Melt coconut butter in a 9x9'' glass baking dish. Add in beets, stir to combine, and add rosemary and Herbamare. Cover and bake at 400 until tender (about 45 minutes).
