Dilled Carrot Slaw with Feta Cheese

If you think slaws are boring... it's time you met our Dilled Carrot Slaw recipe with Feta Cheese and a perfect Apple Cider Vinegar Dressing. It can be made up in about 10 minutes, tastes delicious, and keeps well in the fridge for a few days for a quick side salad or snack.

What's so great about it... besides the taste? Well, you probably know that carrots are rich in vitamin A, which is good for your eyesight, but they are also good for your immune system due to a number of antiseptic and antibacterial abilities. What else do they have? Vitamin C, vitamin K, vitamin B8, pantothenic acid, folate, potassium, iron, copper, and manganese. Yep, it's quite a resume!

The sweetness of the carrots mixed with the tang of dill and feta is oh-so-good in this recipe. And the dressing is the perfect companion, mixing together apple cider vinegar, agave or maple syrup, olive oil, and a little Herbamare for that hit of saltiness. Dilled Carrot Slaw with Feta Cheese

4 cups organic carrots, grated or matchsticks
1/2 cup baby dill, chopped
1 cup feta, crumbled
2 Tbsp apple cider vinegar
1/2 tsp agave nectar or maple syrup
1/4 cup extra virgin olive oil
1/2 tsp Herbamare

Combine carrots and dill. Make the dressing: place vinegar, agave or maple syrup, olive oil, and Herbamare in a glass jar and shake well or use an immersion blender to combine. Toss salad with dressing, and top with feta. Enjoy!
