There is something to be said for a vegetable that is as versatile as asparagus. In this salad, we chop it up raw for a satisfying crunch, and it partners so well with the carrot and red pepper. The dressing features apple cider vinegar, which has so many health benefits for your body like detoxification and pH balance, with mustard and a touch of sweet maple syrup. Asparagus Crunch Salad with Apple Cider Vinegar Dressing
1 bunch asparagus (about 1 pound)
3 cups carrots, peeled and cut into rectangles or matchsticks
1 cup red pepper, finely chopped
1 cup red onion, finely chopped
Dressing
1/3 cup apple cider vinegar
2/3 cup extra virgin olive oil
1/2 tsp Herbamare
1 tsp dried onion flakes
1 Tbsp grainy mustard
1 tsp maple syrup
Cut asparagus into 2 inch pieces. Place all salad ingredients in a bowl. Combine dressing ingredients and blend them well. Pour dressing over salad and transfer to a serving bowl.
