This salad combines autumn inspired ingredients into one healthy meal. With holiday entertaining it’s hard to stick to a healthy diet, but with this salad you won’t be feeling guilty. Filled with organic fruit, vegetables, and protein rich walnuts, it’s no wonder this salad will leave you feeling full and satisfied. Top this salad off with creamy goat cheese and our honey balsamic vinaigrette and you’ll want to make this salad all year around!
1 head of organic romaine lettuce
1 cup toasted walnuts
1 organic apple, diced with peel on
1 organic pear, diced with peel on
1 organic beet, cooked, peeled and diced
¼ cup dried cranberries
½ cup goat cheese
Dressing
1/4 cup balsamic vinegar
1 Tbsp honey
1/2 tsp Herbamare
¾ cup extra-virgin olive oil
Place ingredients in a blender or use an immersion blender.
Place lettuce in a pretty salad bowl. Throw in remaining ingredients. Toss with balsamic dressing and serve.
