Stuck on what type of appetizer to make for your family and friends? This white bean dip will be a crowd pleaser amongst some of the pickiest eaters. Packed full with healthy protein, herbs, and spices it will keep you feeling full and satisfied until your next course. Adding lemon to this dip is an excellent way to get in your vitamin C and help rev up your metabolism. Enjoy this dip with your favourite crackers or veggie sticks.
1 can navy beans, drained (can also use Great Northern Beans or Cannelini Beans)
1 tbsp. organic garlic, finely chopped
¼ cup organic Italian parsley, finely chopped
1 tbsp. organic lemon juice
1 tbsp. organic lemon zest
½ tsp. Herbamare
¼ cup extra-virgin olive oil
Extra olive oil and parsley for garnish
Place everything in the bowl of a food processor. Process until smooth. Place in a pretty serving bowl. Drizzle with extra-virgin olive oil and chopped parsley. Serve with chopped organic vegetables or rice crackers.
