2 tbsp. coconut oil
1 cup chopped organic yellow onion
1 cup chopped organic celery
2 large organic carrots, chopped in chunks and parboiled
1 organic zucchini, chopped
1 organic red pepper, chopped
2 cloves organic minced garlic
2 cans Eden pinto beans
1 can Eden black soybeans
1 can Eden navy beans
1/2 tsp. cumin
1/2 tsp. celery salt
1/4 tsp. coriander seed powder
pinch cayenne
1 tsp. coarse grey sea salt
1 piece wakame, crumbled
1 tbsp. gluten free tamari
1 cup water
Saute onion, celery, zucchini, pepper, and garlic in coconut oil over medium heat until vegetables soften. Add in salt, wakame, tamari, water, and spices. Stir to combine and add in drained beans. Simmer for a half hour. Enjoy!
