Zucchini Cakes with Cilantro & Cayenne Pepper

Good as a side or on their own.
2 cups grated organic zucchini
1 tsp. Herbamare
2 eggs, beaten
1/2 cup spelt flour
1/2 cup finely chopped organic cilantro
1 small organic onion, grated
1/8 tsp. cayenne pepper
coconut oil  

 

In mixing bowl, combine grated zucchini, Herbamare, eggs, flour, cilantro, onion and cayenne.  Melt coconut oil over medium heat.  Drop zucchini mixture by tablespoons into the coconut oil.  Fry about 3 minutes per side or until golden.  Flip cakes over and fry another 3 minutes or until golden.  Remove and serve hot.
