Mediterranean Shish-Kabobs with Lemon Rosemary Marinade

Shish-ka-bobs offer a fun and tasty twist on grilling season. These Mediterranean style ka-bobs are a mix of free range chicken, zucchini, red onion, cherry tomatoes, and red peppers mixed in a light and flavourful marinade. Enjoy!
  •   1 organic boneless chicken breast, cut into bite-sized pieces
  • 1 organic zucchini, cut into 1 inch slices
  • 1/2 organic red onion, cut into wedges
  • organic cherry tomatoes
  • 1/2 organic red pepper cut into 1 inch squares


  • Juice of one lemon
  • 1/2 tsp Herbamare
  • 1/2 tsp ground black pepper
  • 1 tbsp. dried rosemary
  • 1 clove chopped organic garlic
  • 1 tbsp. extra virgin olive oil  

Place marinade in a square glass dish. Marinate chicken 2-4 hours. Assemble kabobs (if using wooden skewers soak 4 hours or overnight). Piece of chicken, red onion wedge, zucchini slice, red pepper square, piece of chicken, cherry tomato. Repeat so that each skewer has one cherry tomato and ends with a piece of chicken. Grill over medium heat, approximately 10 minutes or until chicken is cooked through. Turn chicken every couple of minutes. Serve and enjoy!
