Layered Southwestern Salad with Creamy Cilantro Dressing
Road trips can be super fun and healthy if you plan ahead. I hate wasting money on fast food when I am on the road and I also hate how it makes me feel! Take time to pack some really nourishing delicious food. This salad in a jar is perfect. Maybe make up some granola or hard boiled eggs or a grab and go dessert. Veggies and dip are always a good idea. When my kids were young I would pack a cooler bag with wraps and all the different toppings so they could create their own when we stopped. Pack a table cloth and grab a picnic table along the way. The nourishment from the food will leave you feeling invigorated and ready for the rest of your journey!
- 1/4 cup creamy cilantro salad dressing
- 2 cups mixed lettuces
- 1/2 cup cherry tomatoes, halved
- 1/2 cup orange pepper, finely diced
- 1/2 avocado, finely diced
- 1/4 cup finely diced red onion
- 1/2 cup black soybeans, drained
- 1/2 cup grated cheese
- Option: Cooked sliced chicken
Creamy Cilantro Salad Dressing
¼ cup lime juice
¼ cup cilantro
½ tsp. Herbamere
2 Tbsp. Hemp seeds
½ cup extra virgin olive oil
Place dressing ingredients in blender bowl. Puree. Place the dressing in the bottom of a large mason jar (or any other glass container). Layer the remaining salad ingredients. Place lid on jar and put in cooler bag.
