Preheat oven to 275°F. Lay almonds on baking sheet and toast for 5 minutes. Remove from oven and place in a large bowl. In a saucepan over medium heat, combine maple syrup, coconut sugar, sea salt and cinnamon and stir constantly to combine. Bring to a boil and reduce heat to simmer. Keep stirring the mixture until it gets thick. As soon as the mixture caramelizes, remove the stove and pour over the almonds immediately. Toss to coat the almonds immediately. Toss to coat the almonds quickly before the mixture hardens. Lay the almonds on a baking sheet to cool.
Once cool, break up any clumps that may have hardened together. Combine the Maui mix and almonds in a large bowl and dish into jars for gift-giving.
