Gluten-Free S’mores Cake Pops



  1. Make cake mix as the bag states. Bake in 10” cake pan at 350°F for approx. 10 minutes. Set aside until cooled completely.
  2. Mix butter, icing sugar, milk and vanilla with an electric mixer for around 10 minutes till light and fluffy.
  3. Break up cooled cake into pieces and place in mixing bowl with icing sugar mixture.
  4. Mix till combined and scoop into 1 oz balls. Roll balls until completely round and place on a plate. Insert a straw into each ball.
  5. Melt semi-sweet chocolate chips and coconut oil over double boiler stirring till melted.
  6. Once melted, dip balls into chocolate mixture and place on ½ a graham cracker then onto a parchment lined tray. While chocolate is still melted, place marshmallows on cake pops and let set. Only dip a couple balls then add the marshmallows quickly before the chocolate sets.
