A taste of France in your crockpot! Coq au Vin is a rich French dish of chicken and vegetables cooked in red wine. The name itself sounds fancy buts its surprisingly easy to make. We used organic chicken that is free of hormones and antibiotics, so you can feel good feeding this to your family. Combined with organic vegetables and red wine you are able to turn simple chicken into a delectable gourmet meal. Easy enough for everyday...fancy enough for company!
Lay carrots in bottom of crockpot. Gently fry bacon pieces until almost done. Remove from pan and sprinkle over top of carrots. Add to the bacon pan, onion, garlic and baby bellas. Sauté until golden. Pour these vegetables over the carrot/bacon mixture. In a medium bowl combine arrowroot flour, Herbamare and pepper. Stir well. Remove the skins from the chicken and dredge in arrowroot flour mixture. Add the butter to the pan. Add the chicken pieces and sauté until golden on the outside. Place the chicken on top of the vegetables in the crockpot. Pour the wine, salt and the chicken stock into the pan and stir to scrape up the bits on the bottom. Pour the liquid overtop of the chicken. Turn crockpot onto High for 4 hours, or Low for 6. If desired, remove the bones from the chicken.
