These gluten free cookies are chewy, and so full of flavour you won’t even remember they are healthy!
Want a little bit of everything? If you can't decide between adding chocolates chips vs. dried fruit to your cookie, then this is the cookie for you! A delicious gluten free cookie that uses a bit of everything such as chocolate, dried cranberries, seeds, and the list goes on! You will be able to enjoy a healthier cookie made with almond flour, and sweetened with coconut sugar. Both these ingredients are great because they include healthy fats and help maintain a low glycemix index. Feel free to add more seeds or dried fruit to suit your craving!
Cream butter, sugar and egg. Beat in baking powder, baking soda and flour. Stir in coconut, sunflower seeds, chocolate chips and cranberries. Drop by teaspoonful onto parchment-lined cookie sheet. Press down a little to flatten. Bake at 350°F for approximately 10-12 minutes or until cookie is golden on the bottom. Let cool completely before removing from the pan.

These are fanastic! I found the recipe in a Nourish Magazine I picked up last year and then I lost it! I was in a panic! Thank goodness it is here! Love your recipes.
