Cauliflower, Squash, & Roasted Red Pepper Soup

This flavourful soup is a fresh punch to your pallet! Enjoy the taste of cauliflower, squash, and roasted red pepper. Top it with some fresh basil for an extra pop!


  • 1 Cup Onion, Finely Chopped
  • 1 TBSP. Garlic, Finely Chopped
  • 1 Head of Cauliflower, Chopped (About 6 Cups)
  • 1 Butternut Squash, Peeled, Seeded, and Chopped (About 4 Cups)
  • 3 Roasted Red Peppers
  • 10 Cups Water
  • 1 TBSP. Coarse Salt
  • 1 TBSP. Tamari
  • Fresh Cracked Black Pepper
  • 1 Can Full Fat Coconut Cream


Place everything in a stock pot except for the coconut cream. Bring to a boil and let simmer about a half an hour, or until vegetables are tender. Puree and add in coconut cream. Adjust seasonings.
