Carrot, Beet and Apple Salad with Lemon-Agave Dressing
Nothing beats the colour and flavour of in-season beets. And this delicious, fresh salad is another way you can enjoy all their goodness. The combination of beets, apples, and carrots is perfect, and the feta offers a complement full of flavour.
- 2 large organic beets, peeled & shredded
- 2 organic carrots, peeled & shredded
- 2 organic apples, shredded
- 1 cup crumbled feta cheese
- 1 cup sunflower seeds
Dressing:
- 1/4 cup lemon juice
- 1 tsp Herbamare
- 1 Tbsp agave nectar
- 1 Tbsp grainy mustard
- 1/2 cup extra virgin olive oil
Place ingredients of dressing in jar. Shake well or blend with immersion blender.
Combine ingredients except feta and seeds into a large bowl. Toss with dressing. Mix well and pour into salad bowl. Top with feta and sunflower seeds. - By: Sandy Pomeroy
