Gluten-Free Almond Brittle with coconut Sugar

This is a healthier twist on a classic favourite. Brittle is usually made with refined sugar--something you definitely want to avoid. This recipe uses coconut sugar and honey, both natural choices for healthier sweeteners that won't spike blood sugar or cause the detrimental effects that white sugar causes. Plus, this recipe is dairy free, refined sugar free, gluten free, and nutritious! Try this delicious recipe and package some up for a homemade holiday gift filled with love!  

Bring honey, water, and coconut sugar to a boil. Stir to ensure coconut sugar is dissolved and add in coconut oil/butter ghee. Stir constantly until candy thermometer reaches 280F (about 10 minutes, or drop a little of the mixture into a glass of cold water and if it forms a hard ball, it is ready). Add almonds and stir for another minute or two (until whiskers form when you drop the mixture from the spoon). Remove from heat and stir in baking soda. Mixture will rise. Work quickly and turn this mixture out onto parchment-lined cookie sheet. Form into a rectangle shape and cool for about 30 minutes. Break candy into pieces and store in a sealed container in the refrigerator. Recipe by: Sandy Pomeroy
