Vegan & Nut Free Chocolate Peanut Butter Cups

Halloween is right around the corner! If you have little ones, they’re probably getting excited to dress up in their costume and collect some treats. If you don’t have kids, maybe you’re excited to eat some of the treats yourself! Maybe your favourite treat is one with chocolate and peanut butter—but also comes laden with sugar, artificial colours and flavours, sweeteners, and preservatives. Make Halloween a little healthier this year by making some homemade treats for your family, friends and coworkers. Author and Nutritionist Jesse Lane has shared her delicious healthy peanut butter cup recipe with us. These delicious treats are completely raw, vegan, nut free, paleo, and sugar free, but are 100% delicious. And best of all, they only take 10 minutes to make!

Nut Free Sugar Free Peanut Butter Cups (raw vegan, nut free, paleo, sugar free)
Prep time: 10 minutes | Chill Time: 2 hours | Serving Size: 6 large or 12 small healthy peanut butter cups  

Ingredients

Carob Shell

 Sunflower Seed Filling   Directions
  1. To make the carob shell, whisk the melted coconut oil, carob powder, stevia and vanilla together in a small bowl.
  2. Pour a third of the carob shell mixture into a muffin pan lined with paper or silicone liners and place in the freezer to set.
  3. While the bases for the healthy peanut butter cups are hardening, make the filling by stirring together the sunflower seed butter, nutritional yeast, 1 Tbsp coconut flour, stevia and salt. Depending on the consistency of the sunflower seed butter you are using, add additional coconut flour until the filling becomes a wet dough.
  4. Remove the muffin pan from the freezer and roll the sunflower seed filling into balls. Place a sunflower seed filling ball into each base and flatten it into a smooth disk.
  5. Top with the remaining carob shell mixture and freeze for 2 hours to set.
  6. Store in the freezer in an air tight container and serve cold.
