These gluten free oatmeal balls are healthy, but they sure don’t taste healthy! A combination of simple ingredients resulting in one delicious and healthy treat. Naturally sweetened with honey and rolled together with oats, coconut, seeds, sunflower butter and flax seeds, you are packing this snack with high protein and healthy fats which will fill you up quickly. Add in some gluten free chocolate chips for extra crunch and chocolatey goodness. Don’t forget to save the rest in the refrigerator for a quick grab n’ go next time you hear that little voice utter the words, “I’m hungry”.
1 cup quick cook oats∕³cup shredded coconut
½ cup sunflower seeds
2/3 cup shredded coconut
½ cup Sunbutter Sunflower Seed Butter
½ cup ground flax seeds
½ cup Enjoy Life gluten free chocolate chips
¹∕³ cup honey
Place everything in a large bowl. Mix together with your hands until combined. Roll into 2” balls. Refrigerate. Add wooden sticks for a fun way for kids to eat this yummy treat.

Hi Pam—thanks for noticing this error! We have fixed the recipe. It calls for 2/3 cup shredded coconut. Hope you enjoy these, they are delicious!

Hi Erin, they will last up to two weeks in the fridge—probably longer, but they might get a bit dry after that. You can certainly freeze them and take them out when you need some!

Hi Jen, the honey adds some sweetness and also would hold the balls together better than coconut oil. You could try using maple syrup instead, though I am not sure they would turn out the same. I hope this helps!

Could the honey be substituted with Coconut oil and if so how much coconut oil would you recommend?

I am reading your oatmeal ball recipe and in the introduction it includes coconut as one of the ingredients but I do not see it anywhere in the recipe? Love coconut. Would you mind sending me the amount of coconut I will need. Otherwise, it’ll be trial and error.
