Gluten Free Red Velvet Beet Brownies

Delicious gluten free brownies with an added healthy ingredient. Most red velvet recipes call for red food colouring, and a lot of it. What most people don’t know is that red food colouring can be linked to a variety of health related issues and by simply removing it from your diet you can eliminate them. That’s why we used beets to naturally colour our brownies. Blended and hidden amongst dark chocolate, you would never know there were 3 beets in these brownies. Moist, healthy and packed with flavour - we would say these are the best red velvet brownies out there!  

 

3 medium organic beets
3 free range eggs
3 Tbsp melted butter
1/3 cup coconut sugar
¼ cup almond or sunflower butter
1 tsp vanilla
1/3 cup almond flour
½ cup dark cocoa powder
½ tsp baking powder
½ cup Enjoy Life chocolate chips
¼ cup chopped walnuts

Boil beets until tender (about 1 hour). Drain and peel. Cut and throw into food processor while still hot. Puree. Let cool. Beat eggs well. Add in 1 1/2½ cups beet puree. Beat in coconut sugar, nut butter and vanilla. Add in almond flour, cocoa powder and baking powder and mix well, until all ingredients are incorporated. Beat in chocolate chips and walnuts.

Grease an 8 x 8” pan with butter or coconut oil. Pour in batter. Bake at 350˚F for 20 minutes, or until a toothpick inserted in centre comes out clean. Allow to cool and cut into squares.

The ingredients calls for 3 Tbsp melted butter but no where in the instructions does it say to add it.

I added it after the beets but I had to bake the brownies for an extra 15 minutes and they were still too moist.
