Ready to switch up your classic mashed potatoes? Get mashing with this creamy yam side dish! Your body will be thanking you for making the switch to yams. This vegetable is loaded with vitamin C, vitamin A and beta-carotene which is great for your skin. This gluten free side dish is one that your guests will be swooning for!
4-6 medium organic yams
¼cup unsalted butter
¼ cup finely chopped organic garlic
1/3 cup cream or soymilk
1/2 tsp Herbamare
Peel and slice the yams. Boil in a medium saucepan until tender. Drain liquid off. Mash the yams. Melt butter in a small skillet. Add in garlic and Herbamare. Saute´ until garlic softens and becomes fragrant (not brown). Remove from heat and pour the butter mixture into the mashed yams. Add the milk or cream and beat well. Spoon into serving dish. (OR spoon into a casserole dish and reheat before dinner.)
