A sweet side dish packed with flavour! This is one side dish you can feel good about putting on your dinner table. Not only are sweet potatoes readily available and inexpensive but they are also high in vitamin B6, vitamin C and much, much, more. Try these out next time you're out grilling on the BBQ!
2 organic medium-sized sweet potatoes
1 cup organic red onion, sliced
1 tbsp. fresh organic rosemary, chopped
1 tbsp. coconut oil/butter ghee
fresh pepper and Herbamare, to taste
Peel and cut potatoes into 1/4" slices. Place on top of a piece of tinfoil. Make sure there is a border of a couple inches all around of foil. Sprinkle onions overtop and place dabs of the coconut oil/butter ghee overtop. Season with pepper, Herbamare, and chopped rosemary. Place another piece of foil over top and roll up the edges all around. Grill on BBQ about 10 minutes per side or bake 30 minutes in 350F oven. Be careful of the steam when you open packet.

Hi Susan, thanks for your comment! Since we do these on the grill, foil is best to keep them secure; however, feel free to use alternative methods of cooking them!

Knowing what exposure to aluminum does, I’m always surprised when I see you publish a recipe using foil and not lining it with parchment to prevent food from being cooked touching foil.
