This pizza is brought to you by mineral and vitamin packed organic sweet potato and kale! It's not every day you see a pizza loaded with kale and sweet potato but over here we don't shy away from trying out new ingredients, and let me tell you, this one is for the books! Using a pesto sauce as the base is a great way to switch things up instead of using the traditional tomato sauce. Basil is full of vitamin K, and an easy way to consume it, aside from sprinkling it on top of your favourite dish is by incorporating it into a sauce, plus who doesn't love a lot of basil? Both the sweet potato and kale on this pizza are high in vitamins, good sources of energy and packed with flavour. Top this pizza off with Woolwich goat cheese and you're looking at your new favourite veggie pizza!
8” pizza crust (of your choice)
3 tbsp. Sunflower Kitchen basil pesto
1 organic sweet potato, chopped and roasted
½ cup organic kale, chopped
2 cloves organic garlic, chopped
½ organic onion, sliced
¼ cup Woolwich goat cheese, crumbled
Spoon the pesto over the pizza crust and spread evenly. Add the garlic, onion, roasted sweet potato, and chopped kale. Sprinkle the goat cheese over everything. Put it on a pan in the oven at 350°F for 30 minutes. Remove, allow to cool for 5 minutes, and serve.
