The gluten free herbed croutons and finely shredded cheese make this soup out-of-this world!
If you have never made French Onion Soup you don't know what you are missing! Packed with cheese and gluten free croutons this soup is overflowing with flavor, and not to mention - super easy to make. Feel free to switch up the recipe if you prefer more or less of cheese and croutons, its your chance to play around with ingredients. Follow these simple steps to make a great bowl of French onion soup to enjoy on those rainy days!
5 large organic yellow onions (about 10 cups)
2 tbsp. organic garlic, chopped
1/4 cup butter or ghee
1-2 tbsp. coarse salt
1 tbsp. honey or maple syrup
1 tbsp. arrowroot flour
2 tbsp. tamari
12 cups water
Emmenthal, Swiss or Gruyere Cheese
Gluten free herbed croutons (below)
Melt butter in stock pot over medium heat. Peel onions, slice in half and then slice very thin. You want about 10 cups. Add onions to stock pot. Sauté for 10 minutes, stirring often. Add in garlic, maple syrup or honey and salt. Sauté for another 10 minutes until onions start to caramelize. Add the arrowroot flour to the onions and stir well to coat. Add in water and tamari and let simmer for about 20 minutes to let flavours mesh.
To serve: Ladel out hot soup into serving dish. Sprinkle with croutons (about 1/4 cup). Cover with grated cheese (about 1/4 cup per serving). Place under broiler for 5 minutes or until golden. Serve. Bowls will be hot.
Herbed Croutons
1 load Udi's gluten-free bread
2 tbsp. extra virgin olive oil
1 tsp. dried basil
1/2 tsp. dried oregano
1 tsp. garlic powder
1 tsp. Herbamare
Cut crust off bread and cut into small pieces. Throw into a 9 x 13" glass baking dish. Pour remaining ingredients over bread and stir well to combine. Bake at 350°F for approx. 30 minutes, stirring frequently.
