The Best Gluten-Free Quinoa Salad with Apple Cider Vinegar Dressing

This recipe is great to make in advance so you can pack it throughout the week for healthy lunches. If you're expecting dinner guests, make it ahead and store it the fridge for later. Either way, it's full of flavour, nutrients and vitamins so you'll be satisfied no matter what!  

The Best Quinoa Salad Recipe

2 cups cooked quinoa
1 cup grated carrot (approximately 2 large carrots)
1/2 cup finely chopped red pepper
1/2 cup finely chopped celery
3 chopped green onions
1/4 cup sunflower seeds
1 cup chopped parsley  

Dressing Recipe

1/3 cup extra virgin olive oil
3 tbsp apple cider vinegar
1 tbsp lemon juice
1 tbsp tamari sauce
1/2 tsp black pepper
1 tsp Herbamare
1/4 cup toasted sesame seeds  

Cook the quinoa according to the package directions. Let stand to cool. Combine the remaining ingredients together and toss the quinoa on top. In a separate bowl, combine the dressing ingredients. To toast the sesame seeds, place the seeds in a dry frying pan on low heat. Stir the sesame seeds until they are turning light brown. Remove and pour into the dressing. Stir. Pour the dressing on top and stir. Chill in fridge before serving.
