If you're eating gluten free, you might think that means no more cookies or treats for you... but think again! These melt-in-your-mouth Peanut Butter Chocolate Chunk Cookies combine the best of both worlds, and better yet, are completely gluten free. Try a batch today for a moist, delicious cookie treat.
Ingredients:
- 1/2 cup butter, softened
- 1/2 cup natural peanut butter
- 1 large egg
- 1/2 cup sucanat or coconut sugar
- 1/2 cup gluten free all-purpose flour
- 1/2 tsp. baking powder
- 1 1/4 cups Enjoy Life Mega Chunks
- 1 cup chopped pecans
Method:
- Cream together butter, peanut butter, egg and sucanat or coconut sugar.
- Add in flour and baking powder. Stir until all is incorporated and add in chocolate and pecans.
- Drop by teaspoonful onto parchment-lined cookie sheet. Place cookies a couple inches apart.
- Bake at 350°F for about 12 minutes or until golden. Let cool before removing from cookie sheet.
