If you're eating gluten free, you might think that means no more cookies or treats for you... but think again! These melt-in-your-mouth Peanut Butter Chocolate Chunk Cookies combine the best of both worlds, and better yet, are completely gluten free. Try a batch today for a moist, delicious cookie treat.
Cream together butter, peanut butter, egg and sucanat or coconut sugar.
Add in flour and baking powder. Stir until all is incorporated and add in chocolate and pecans.
Drop by teaspoonful onto parchment-lined cookie sheet. Place cookies a couple inches apart.
Bake at 350°F for about 12 minutes or until golden. Let cool before removing from cookie sheet.
