1 log goat cheese (chevre), softened
1 cup grated raw milk cheddar
2 grated organic apples (use skin as well)
1 tbsp. finely chopped organic red pepper
1 tbsp. finely chopped organic green onion
1 tsp. lemon juice
1 tsp. Worcestershire sauce
Neal Brothers Tortilla Chips
Cracker of your choice (such as Edward and Sons Rice Crisps)
Organic Goji Berries
In a mixing bowl, combine goat cheese, grated cheddar, grated apple, chopped red pepper, chopped green onion, lemon juice, and Worcestershire sauce. Mix until well combined. Measure out tbsps. of the cheese mixture and roll into round balls. Set aside. Using the cracker of your choice, crush the crackers into small crumbs on a dinner plate until you have a good layer of crumbs. Roll your cheddar balls in the cracker crumbs to coat. Add 2 tortilla chips to each ball to look like bat wings, and 2 goji berries to each ball to look like bat eyes. Enjoy your spooktacular treat!
