2 boneless, skinless organic chicken breasts sliced in half horizontally
1 egg, beaten
2 cloves finely chopped organic garlic
1/2 cup pumpkin purée
1 tsp. Herbamare
1/4 tsp. nutmeg
Combine these ingredients in a flat-bottomed glass bowl. Mix well.
1 cup gluten-free breadcrumbs
1/2 tsp. fine black pepper
1/2 tsp. Herbamare
Combine these ingredients in a flat-bottomed glass bowl. Stir.
Melt 2 tbsp. coconut oil/butter ghee in a skillet over medium heat. Dredge each piece of chicken in pumpkin mixture and then coat with breadcrumbs. Place in skillet and cook over medium heat about 3 minutes per side. Remove chicken to a glass baking dish. Bake uncovered at 350F for 20 minutes. - By: Sandy Pomeroy
