Vegan Cake

  • 1 ¾ cup cane sugar
  • 1 ½ cup vegan butter
  • 3 cup unbleached flour
  • 1 cup almond meal
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp sea salt
  • 300 ml almond milk
  • 1 tsp vanilla 

    Method:

    Cake

    1. Preheat oven to 350F
    2. Cream vegan butter and sugar in large mixing bowl till light and fluffy
    3. Add remaining cake ingredients into the bowl and mix till completely combined. Careful not to overmix
    4. Transfer batter into parchment lined baking sheet pan and bake in preheated oven for 20 - 30 minutes.

     

    Vegan Icing

    • 227g vegan butter
    • 500g organic icing sugar
    • 1 tsp pure vanilla extract

    Icing

    1. Mix all ingredients together in till light and fluffy. Should take a few minutes
