        Vegan Cake Minis
      
      
        
 

Vegan Cake
- 1 ¾ cup cane sugar
 
- 1 ½ cup vegan butter
 
- 3 cup unbleached flour
 
- 1 cup almond meal
 
- 1 tsp baking powder
 
- 1 tsp baking soda
 
- ¼ tsp sea salt
 
- 300 ml almond milk
 
- 1 tsp vanilla 
 
- 
 
Method:
Cake
- Preheat oven to 350F
 
- Cream vegan butter and sugar in large mixing bowl till light and fluffy
 
- Add remaining cake ingredients into the bowl and mix till completely combined. Careful not to overmix
 
- Transfer batter into parchment lined baking sheet pan and bake in preheated oven for 20 - 30 minutes.
 
 
Vegan Icing
- 227g vegan butter
 
- 500g organic icing sugar
 
- 1 tsp pure vanilla extract
 
Icing
