3 ripe organic avocados
1 organic roma tomato, finely diced
2 Tbsp. finely chopped organic red onion
3 Tbsp. finely chopped organic cilantro
1 tsp. finely minced organic garlic
1/2 tsp. Herbamare, or more if desired
2 organic limes
1/4 cup full-fat sour cream
a couple organic large black pitted olives
Slice avocados in half, remove pit and scoop out the flesh. Dice and throw into a bowl. Add tomato, red onion, garlic, cilantro, juice of 2 limes and Herbamare to taste. Mix together well and pour it onto a small serving plate, forming it into a mound or a “hill”.
Place sour cream in a piping bag and make a small circle on the top of a mound. Make 2 or 3 more circles around the mound. Take a butter knife, and starting at the top circle, drag the knife (top to bottom) through the sour cream marks to make the web effect. Do this 4-5 times. Slice an olive in half. Place the half in the middle of the first sour cream circle on top of the mound. Take a sharp pairing knife and with the second half of the olive, cut fine strips to make the spider’s legs. You need 8. Use another olive if needed. Take the 8 legs and stick them into the guacamole around the spider’s body - 4 on each side.
