When it's chilly out, we can't think of a more perfect snack or dessert than a delicious, warm baked apple. With tasty spices, nuts and dried fruit, you are sure to put smiles on the faces of your family and friends.
- 4 large firm, tart organic apples
- 1 tbsp. organic lemon juice
- 1/4 cup maple syrup
- 1/4 cup golden raisins
- 1/4 cup chopped dried apricots
- 1/4 cup finely chopped pecans
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/2 cup water
Preheat the oven to 350 degrees F. Core apples whole and place in a glass baking dish. Sprinkle apples with lemon juice. Combine the maple syrup, raisins, apricots, nuts and spices. Stir to coat. Fill the apples with the mixture. Pour the water into the bottom of the dish and then cover the dish with tin foil. Bake for 25 minutes. Remove the foil, baste the apples with the juices on the bottom of the pan and then continue to bake for another 10-15 minutes until the apples are tender. You can serve them warm or at room temperature.
