Breakfast Burritos

Burritos for breakfast are what’s new! We’ve got a veggie grand-slam, rolled into an easy on-the-go breaky that is packed with wholesome fuel. Dip it in our tasty dressing or pour it over and dig in with a fork! The choice is yours!

Ingredients:

  • 2 Spelt Wraps
  • ¼ Cup Sunflower Kitchen Hummus
  • 1 Cup Cooked Long Grain Brown Rice
  • ½ Cup Black Soybeans
  • 1 Cup Romaine Lettuce, Shredded
  • ½ Cup Red Pepper, Diced
  • 1 Avocado, Pitted & Diced
  • 2 TBSP. Cilantro, Finely Chopped

Vegan Dressing

  • 1 TBSP. Salsa of your choice
  • ¼ Cup Extra-Virgin Olive Oil
  • ¼ TSP. Herbamare
  • ½ TSP. Finely Chopped Garlic
  • 1 TBSP. Fresh Lime Juice

Method:

Spread each wrap with 2 TBSP. Hummus. Closer to one end, spread a row of brown rice (1/2 cup), spoon ¼ black soybeans overtop. Place ½ cup of the lettuce on top, and layer ¼ cup red pepper, ½ diced avocado, and 1TBSP. cilantro. For the dressing, puree with an immersion blender. Drizzle with half of the dressing. Repeat. Roll up and enjoy it!
