For some reason, the idea of “fruitcake” at Christmas has never been super exciting. However, we’ve taken that classic baked good and made it into delicious Christmas Fruit Bars – and they are super exciting, in both ingredients and taste!

You can make these bars entirely gluten free by choosing to use gluten free flour for the base. They’re naturally dairy free, and also free of refined sugar. They incorporate all the best spices of the season, such as cinnamon, nutmeg, allspice, and cloves, and have a mix of delicious dried fruit and nuts for the perfect mix of sweet and savoury. The addition of ground ginger make them anti-inflammatory, and ginger can also help lower blood sugar.
Of the 17 ingredients, you can purchase 15 of them in our bulk department, saving you money on packaging and making sure you only get what you need. Filled with flavour and spiced just right, these make great gifts or perfect treat on Christmas day.
1½ cups spelt flour or all-purpose gluten-free flour
1 cup coconut sugar or sucanat
½ cup butter, softened
2 eggs
¾ tsp. baking powder
½ tsp. baking soda
¾ tsp. salt
1 tsp. cinnamon
¼ tsp. allspice
¼ tsp. nutmeg
1/8 tsp. cloves
½ cup dried apricots, chopped
½ cup dried cranberries
½ cup chopped dates
½ cup raisins
½ cup chopped walnuts
¼ tsp. ground ginger or ¼ cup chopped crystallized ginger
Preheat oven to 350°F. In a mixing bowl, cream sucanat or coconut sugar, butter and eggs together. Sift in flour, baking powder, baking soda, salt and spices. Stir in remaining ingredients. Spread into a parchment-lined 9x13” pan. Bake for 20-30 minutes. Let cool completely before cutting into bars.
