Smashed Garlic & Chicken Pizza with Fig Jam

Calling all garlic lovers! This pizza is for you.  

Who knew a tasty pizza could help boost your immune system? These are just a few of the benefits from eating the star ingredient in this pizza which is organic garlic, and lots of it! Don’t shy away from loading this pizza up with chicken - giving you extra protein, and giving you a full and satisfied feeling. You don't need to pay for delivery on this pizza because with simple and delicious ingredients, you can make it on your own!  

14" pizza crust (of your choice)
4 tbsp. extra virgin olive oil
4 tbsp. St. Dalfour fig jam
Fresh rosemary
1 tbsp. butter
1/2 large organic white onion, sliced
1 cooked chicken breast
15-20 cloves of organic garlic, peeled
1/4 cup Woolwich goat cheese, crumbled

  Place cloves of garlic on a cookie sheet or in a small roasting pan and drizzle with camelina oil. Roast in the oven at 400°F for 25-30 minutes, or until cloves are medium-soft. Meanwhile, in a small saucepan over medium heat, warm butter and add in onions when butter coats the pan. Sauté onione for 5-10 minutes, or until caramelized. Remove from heat. Spoon olive oil and fig jam over pizza crust, spreading evenly, and sprinkle with fresh rosemary. Shred the cooked chicken breast with 2 forks, and add the shredded chicken evenly. Sprinkle the onions and goat cheese over the crust. When the garlic is done, add the whole cloves to the pizza. Place on a pan and put in the oven at 350°F for 30 minutes. Remove from the oven and allow to cool 5-10 minutes. With a fork, smash the cloves of garlic to spread evenly. Serve and enjoy!
