Recipe by Sandy Pomeroy
2 organic bananas
2 Tbsp. almond butter
2 Tbsp. Enjoy Life Chocolate Chips
2 tsp. shredded coconut
2 pieces foil
Ice cream or whipped cream
Slice each banana in half lengthwise. Place one of the slices on top of the foil. Spread 1 Tbsp. of almond butter on top of the slice. Top with chocolate chips. Sandwich the other half of the banana together. Sprinkle with 1 tsp. coconut. Gather the foil up and fold down all the edges to make a neat little package. Repeat with the other banana. Place over coals for about 4 minutes. Open up packet (be careful of the steam). Eat as is or with ice cream or whipped cream.
