These sweet potato chips are the perfect snack for kids (and adults!). Regular potato chips aren't always healthy and can be loaded with perservatives, artificial flavours, and damaged oils and fats that you don't want in your body, and certainly not in your child's body. The next time they're asking you for a snack, whip up a batch of these crunchy and flavourful chips for a healthy alternative. Or, make them ahead of time and have some on hand for whenever that craving strikes. Enjoy!
1 large organic sweet potato 1 Tbsp. coconut oil, melted or camelina oil Herbamare
Use a mandolin and slice sweet potato OR slice very thin with a knife. Place on parchment-lined cookie sheet. Brush with oil and sprinkle with Herbamare. Bake at 325°F for two hours. Let cool and serve.
