1 cup coarsely chopped organic red peppers 1/2 cup organic cherry tomatoes, cut in half 1 cup organic English cucumber, finely sliced and cut in half 1/2 organic red onion, sliced very finely 1 organic avocado, chopped
Mix together in a glass jar. Pour over vegetables.
