Asparagus Spring Salad with Apple Cider Vinegar Dressing

Spring brings about an abundance of produce - including delicious asparagus. This fresh salad is great for a side dish or to bring to a spring or summer BBQ.

 

2 lbs organic asparagus, cut off tough ends and chop into 3rds
1 organic red pepper, finely chopped
1 organic red onion, finely chopped

DRESSING
1/2 cup extra-virgin olive oil
1/4 cup apple cider vinegar
1 tbsp maple syrup
1 tsp Herbamare
1 tbsp dried onion flakes  

Steam asparagus until tender-crisp. Place in ice bath and dry. Combine dressing ingredients. Toss over vegetables.
