Whisk together chia seeds, almond milk, vanilla, lemon zest, and sea salt.
Cover and refrigerate overnight.
Lemon Curd:
200ml Goodness Me! organic coconut milk
Zest of 1 lemon
¼ cup fresh lemon juice
¼ cup cane sugar
1 ½ tbsp tapioca starch
Pinch of turmeric, for colour
Mix all ingredients together in a medium sized pot. Bring to a boil, stirring constantly, then reduce heat and simmer for an additional 1-2 minutes, until mixture has thickened. Cover and refrigerate overnight.
