It’s that time of year!
Everyone is settled into their routines but that can also mean a busy schedule.
This easy dish makes a perfect side to any meal - it is quick to make, healthy and delicious.
Red Potatoes with Yogurt and Herbs
6 red potatoes, boiled or steamed until tender
1 onion, diced
2 cloves garlic, chopped
½ cup green onions
2 Tbsp. coconut oil/butter ghee
1 tsp. sea salt
2 cups water or chicken stock
1 cup chopped parsley
½ cup mixed herbs (tarragon, dill, chives, basil)
1 cup plain full-fat yogurt or kefir
Freshly cracked black pepper
Sauté onion in coconut oil until tender. Add celery, green onions and garlic.
Add water or stock, herbs, seasonings and potatoes. Cook until mixture reduces by half.
Just before serving stir in yogurt.
