Raw & Vegan Coconut Snowballs with Dates

This is a fun and easy recipe to make as part of your annual Christmas baking. Not only is it healthy and made with only 5 real ingredients, but it’s a recipe that even the kids can help out with.

One of the recipes in this issue of Nourish is our Coconut Snowballs. They’re just as fun to look at and make as they are to eat! Completely gluten free, sugar free, dairy free, and vegan, these are a healthy holiday treat that you’ll be happy to have on end. They give a quick burst of energy if you’re heading out the door for some holiday shopping, or provide a sweet taste at the end of a long day with a cup of tea.  

These Coconut Snowballs are made with cashews, which are high in healthy fats and magnesium, both of which you definitely need this time of year! Dates provide a touch of sweetness to this recipe, as well as offering a number of minerals like calcium and iron, and vitamins like A and K. Both these powerhouse ingredients are combined with shredded coconut, which helps to fire up our metabolism, to make this possibly the healthiest treat you’ll make this season. With a touch of vanilla and salt to top it off, you’ll love the way these taste!  

Whip up a batch of these delicious Coconut Snowballs and watch as they get gobbled up.  

Coconut Snowballs  
Makes 12 large or 18 small    

1 cup cashews
8 Medjool dates, pitted
1 tsp. pure vanilla
½ tsp. pink salt
1/3 cup shredded unsweetened coconut  

Place cashews and dates in food processor bowl. Keep pulsing to get the mixture coarse. Add vanilla and salt. Process until mixture comes into a ball. Roll mixture into one inch balls and roll into coconut to make the snowballs. Refrigerate.
