Recipe: Ice Cream Coconut Pie
Why keep ice cream in a cone? Goodness Me!'s delicious Loco Cocoa Ice Cream is the perfect chocolatey treat for any type of dessert, even pie! This amazing pie combines natural coconut with the organic, fair trade cocoa of our Loco Cocoa, hitting a number of cravings all at once. You'd be crazy not to try it!
Chocolate Coconut Ice Cream Pie
- 2 cups unsweetened coconut. Try this great option!
- 2 Tbsp. melted butter
- 2 pints Goodness Me! Loco Cocoa Ice Cream
- 1 cup semi-sweet chocolate chips. Try this great option!
- ½ cup full-fat coconut cream or coconut milk. Try this coconut cream or this coconut milk!
Place coconut on a cookie sheet and bake at 350°F for 10 minutes until lightly browned. (Watch very carefully so it doesn’t burn.) In a mixing bowl combine toasted coconut with butter. Pour into a 9” pie plate and pat coconut down on the bottom and up the sides. Place in freezer.
Leave the ice cream out at room temperature for about an hour or until softened. Spoon the softened chocolate ice cream onto the coconut crust in the pie dish. Freeze for a few hours. Melt chocolate chips with coconut cream. Stir until mixture is smooth. Pour over ice cream layer. Freeze 4 hours or overnight. Take out an hour before serving and cut into 8 wedges.
