Directions:
Preheat the oven to 350°F. Melt the 2 Tbsp of butter in a 10 inch cast iron pan over medium heat. Once melted, turn off heat and set aside. Measure all of the batter ingredients into an 8 cup mixing bowl. Mix until well combined with an immersion blender. Set aside.
For the topping, in a separate bowl, mix together the almond flour, coconut sugar, and butter (or coconut oil) until well combined. Add the chocolate chips and chopped nuts, mix well and set aside.
With a spoon, spread the melted butter around the warm cast iron pan, making sure to coat all interior surfaces. Scrape the batter into the pan, and spread out evenly. Crumble topping evenly around the batter. Using oven mitts, set the pan onto the middle rack in the preheated oven. Bake for 40-45 minutes or until a toothpick comes out of the center clean. Remove from the oven and let cool before cutting and serving.
