Canadian Salad with Maple Bacon Vinaigrette
- 2 boneless, skinless chicken breasts
- 6 cups kale, finely chopped
- 2 cups organic strawberries, sliced
- ½ cup red onion, finely chopped
- 1 cup Goat Feta cheese, crumbled
- 3 strips organic bacon, cooked and crumbled
Cut chicken in half horizontally (butterfly) so you have 4 pieces. Season with Herbamare and pepper and grill until cooked through. Let rest about 5 minutes and slice.
Place kale, onion and bacon in salad bowl. Toss with the dressing. Sprinkle the feta on top and lay chicken and strawberries overtop.
Maple Bacon Vinaigrette
5 strips cooked organic bacon
¼ cup apple cider vinegar
¾ cup extra-virgin olive oil
½ tsp. Herbamare
1 Tbsp. maple syrup
Throw into blender and puree.
