Beet Brownies

Beet Brownies

Ingredients:

  • 2 Medium Sized Beets, boiled and grated (about 1 ½ Cups)
  • 3 Eggs
  • ¼ Cup Coconut Sugar
  • ¼ Cup Almond Butter
  • 1 TSP. Vanilla
  • 3 TBSP. Melted Butter or Coconut Oil
  • ½ Cup Almond Flour
  • ½ Cup Dark Cocoa Powder
  • 1 TSP. Baking Soda
  • ½ Cup Dark Chocolate Chips
  • ¼ Cup Walnuts, Chopped

Method:

Beat eggs, coconut sugar, almond butter, coconut oil (or butter) and vanilla together until smooth. Add in almond flour, cocoa powder, baking soda. Beat well and add in grated beets. Fold in chocolate chips and chopped walnuts.

Pour into parchment-lined 9x9” pan. Bake at 350°F for 25-30 minutes, or until the center is cooked through. Cool for 10-20 minutes if you can wait that long! Cut into squares.
