Ingredients:
- 4 bunches organic basil
- ½ cup extra virgin olive oil
- Ice bath
Method:
- Bring a large pot of water to a boil. In a large bowl, add ice and water for an ice bath. Have a deep colander ready in the sink. Once the water is at a full boil, add the basil for 5 seconds and stir briefly with a wooden spoon. Drain immediately into a colander. As soon as the water has drained off, put the basil into the ice bath and cool completely. Remove from ice when cool and squeeze out any excess moisture.
- In a blender, add the oil. Chop the blanched basil roughly and add to the blender. Blend on high speed until smooth. Do not overblend or the mix will get hot and the colour will start to fade. Cool and store. This mix can be frozen for several months.
