Apple & Golden Beet Autumn Soup
Creamy & Smooth, this pot of apples and golden beets create an earthy and homey flavour, enjoyable to the very last drop!
Melt butter in stock pot. Add in onion, garlic, and salt. Sauté until onion is softened. Add in diced beets, apples, and chicken stock. Bring to a boil. Reduce and let simmer for about 15 minutes. Puree and add in cream or coconut cream. Spoon into bowls and place a dollop of crème Fraiche in each bowl. Garnish with dill and serve.
