Decadent Chocolate Peppermint Mousse with Maple Syrup

Chocolate and peppermint, is there any better combination? This delicious dessert has only 4 ingredients – organic whipping cream, dark cocoa powder, peppermint extra, and pure maple syrup. Let’s talk about whipping cream for a second. Have you ever taken a look at the ingredient list for conventional whipping cream? You might see more than one ingredient on that list—those extra things are stabilizers, preservatives, and thickeners. What’s the ingredient list on organic cream, such as Organic Meadow? One ingredient: cream. It should be that simple. There is no need for those other ingredients! And trust me, when you’re making something like a mousse, you want the real thing—for the taste, texture, and health of it.  

While we’re on the subject, choose a fair trade, organic cocoa powder like Camino Cocoa. Fair Trade ensures that the people who help product the product in less fortunate countries are paid fairly. Decadent Christmas Chocolate Peppermint Mousse  

250 ml organic whipping cream  
1 ½ Tbsp. dark cocoa powder  
½ tsp. peppermint extract  
¼ cup pure maple syrup  

Place whipping cream, cocoa powder and peppermint extract in a glass bowl.  Beat until peaks form in the whipped cream. Add in maple syrup and beat well to combine.  Spoon into martini glasses or parfait glasses. Top with a dollop of whipped cream (optional), chocolate shavings and a chocolate peppermint stick.
